Catesby Carman

General Manager

With over a decade of experience in the hospitality industry, Catesby is a dedicated and dynamic Restaurant General Manager. At The Cliff Dining Pub in Draper, she has successfully led the front-of-house team through significant industry changes during the pandemic. Catesby believes in fostering a collaborative and positive work environment to drive high performance and employee satisfaction, which in turn creates excellent guest experiences. She invests heavily in mentoring and empowering her staff, knowing that a strong, motivated team is the backbone of any successful restaurant.

Catesby is committed to creating memorable dining experiences, ensuring that every guest feels valued and attended to. Her dedication to top-tier service has led to many lasting friendships. In addition to her expertise in team building and guest relations, she has a deep passion for curating bar menus that invite guests to explore new flavors or enjoy their favorite comfort drinks. She continually seeks education on spirits, beer, and wine. Catesby is a certified beer server through the Cicerone program, a certified cider professional, and is currently pursuing further Cicerone certification.

Outside of work, Catesby enjoys exploring trails with her husband Harrison and their two dogs, often bringing along a cooler of new beers or spirits to try. She also has a profound love for art, which adds a creative dimension to her life.

Trevor Kingery

Executive Chef

Growing up in an Italian household, Trevor Kingery was immersed in a culture where Sunday dinners were a cherished tradition. His love for community and passion for hospitality took root early, working from a young age. Though his initial path led him to baseball, life had other plans, and after serving 12 years in the U.S. Air Force—earning an honorable discharge—he pursued his culinary dreams.

Trevor holds an Associate's degree in Culinary Arts (2012) and Patisserie in Baking (2015) from Le Cordon Bleu, and his professional experience spans a variety of celebrated kitchens, including Emeril's Chop Shop at Universal Studios in Orlando. In Utah, he honed his skills at Stein Eriksen Lodge under Zane Holmquist and went on to work at Current Fish and Oyster and with the Pago Restaurant Group, before becoming the Executive Chef at the award-winning Cultivate Craft Kitchen.

A dedicated volunteer, Trevor has found purpose working with Utah Foster Care, supporting vulnerable youth through various community initiatives. He is excited to bring his culinary expertise and heart for service to Southern Utah, where he looks forward to welcoming guests to Xetava and sharing his love for fresh, inspired cuisine.
